Alabama ranks 5th in the nation for sweet potato production. So, many Alabama families have sweet potatoes on the menu year round, but here’s a way to serve them for the holidays. Enjoy!
Ingredients:
- 4 sweet potatoes (skins optional)
- 1/4 cup white sugar
- 2 eggs
- 1/2 tsp. salt
- 4 tablespoons butter
- 1/2 cup evaporated milk
- 1 tsp. vanilla extract
- 1 tsp. cinnamon
- 1/4 tsp. ground clove
- 1/4 tsp. ground nutmeg
Crunchy topping:
- 3/4 cup packed brown sugar
- 1/3 cup all-purpose flour
- 4 tablespoons butter
- 3/4 cup crushed pecans
Preheat oven to 325 degrees. In a med/lg pot, bring sweet potatoes to a low boil. Cook about 30 minutes (until tender). Drain and mash with 4 tablespoons (half stick) of butter.
In a large bowl, mix sweet potatoes, white sugar, eggs, salt, evaporated milk, vanilla, cinnamon, clove, and nutmeg until smooth. Pour into a 9×13 inch, greased baking pan.
In medium bowl, mix the brown sugar and flour. Stir in softened butter. Add pecans. Sprinkle over sweet potatoes.
Bake 30 minutes. Topping will be lightly brown.
