1 Head Cauliflower,cut into small florets

1/2 Cup Extra-Virgin Olive Oil

Salt & Pepper, to taste

1 Box Ziti Pasta

1 (14.5 oz) can Fire Roasted Tomatoes

8 ounces Feta Cheese, Crumbled

2 Cup Pitted Black Olives, drained and chopped in half

1/2 Cup Panko Bread Cumbs

3/4 Cup Chopped Flat Leap Parsley, optional

1. Preheat the oven to 425 degrees. On a baking sheet, toss the cauliflower with 1/4 cup Olive Oil and season with Salt and Pepper. Roast, stirring halfway through, until browned, 20-25 minutes. Remove from the oven. Lower the oven temperature to 350 degrees.

2. Meanwhile, in a large pot of salted boiling water, cook the Ziti until al dente. Drain, reserving 1/2 cooking water. Return the pasta and cooking water to the pot and stir in the Fire Roasted Tomatoes, Feta, Olives, Parsley and remaining 1/4 cup Olive Oil.

3. Pour the mixture into a 2 quart baking dish; top with the roasted Cauliflower, Feta and Bread Crumbs. Bake until heated through, about 15-20 minutes. Enjoy!
