1 pound Italian sausage, casings removed
1 pound lean ground beef
1/4 cup olive oil
1 large onion, diced
2 green bell pepper, diced
2 carrots, shredded
4 ounces fresh basil, finely chopped
1 fresh spinach, cleaned and finely chopped
1 tablespoon chopped fresh thyme
1 tablespoon fresh oregano
4 cloves garlic, crushed
1 Tbsp. sugar
salt and pepper to taste
3 tomatoes, pureed

In a medium skillet, cook sausage and ground beef until brown. Drain. Reserve 2 tbsp. drippings. Set aside.

In a large stock pot, heat oil. Cook onions in oil until translucent. Add green bell peppers and carrots and cook until tender. Stir in basil, spinach, thyme, oregano, garlic, sugar and salt and pepper. Cook 2 to 5 minutes. Pour in tomatoes, stir well, reduce heat, cover and simmer 3 hours, stirring occasionally. Serve over spaghetti pasta with parmesan cheese.
