3/4 pound sweet potatoes
1 1/2 cups flour
3 1/2 tsp baking powder
1 tsp salt
1/2 tsp nutmeg
2 eggs, beaten
1 1/2 cups milk
1/4 cup butter, melted

Microwave sweet potatoes according to your microwave’s instructions. Once cooked, immerse them in cold water to loosen skins for removal.  Discard skins and mash the sweet potatoes in a medium bowl.  Add eggs, milk, and butter.  Mix.  Sift in remaining dry ingredients and stir until the batter is smooth.

Cook as you would ordinary pancakes.  Flip with a spatula when pancake surface bubbles.
