1/2 pound diced bacon
1 cup chopped onions
1 tbsp. chopped garlic
2 lbs. of peeled sweet potatoes

In a large skillet, cook bacon until crispy.  Grate sweet potatoes.  Remove bacon and dice.  Saute onions in bacon grease or olive oil.  Add garlic, bacon, and sweet potatoes. Season with salt and pepper.  With spatula in hand for frequent flipping, cook for about 10 to 15 minutes.

If you really want to dazzle your taste buds, whip up this easy parmesan sauce.


2 tablespoons butter
1 tablespoon cornstarch
1/4 teaspoon salt
1 1/4 cups milk
1/3 cup grated parmesan cheese

Melt the butter in a medium saucepan. Add the cornstarch, salt, and a dash or two of pepper. Mix until pasty. Add the milk and whisk, careful not to let the mixture scorch. Cook over medium heat, continuing to stir often, until the sauce is thick. Add parmesan and stir until smooth. Top hash browns.
