Ingredients:

  • 1/2 lb. Blue Lake beans
  • 1/2 cup dried cranberries
  • 1 cup dry white wine
  • 1 tsp grated fresh ginger
  • 1 tbsp fresh garlic minced
  • Olive oil
  • salt
  • black pepper

Soak cranberries in wine over night or a minimum of 3 hours.

Prepare fresh beans by washing and trimming stems. Boil in salted water until softened. Strain with cold water, let sit in cold water for three minutes.  Strain again. Remove cranberries from wine. Set wine aside.

Cover the bottom of a large pan with olive oil. Add beans, ginger, and garlic. Saute on high heat for 30 seconds.  Add cranberries and saute for another minute. Add 2 tbsp of remaining white wine and saute for one minute. Season with salt and pepper to taste.
