• 2 cups coarsely grated zucchini
  • 2 large eggs
  • 1 cup unbleached white flour
  • 1 cup whole wheat flour
  • 1/2 tsp Kosher salt
  • 1/2 cup honey
  • 6 tbs unsalted butter, melted
  • 2 1/2 tsp baking powder
  • 1/4 tsp nutmeg
  • 1/2 tsp allspice
  • 1/2 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/2 cup chopped pecans or walnuts
  • 1/3 cup raisins

Preheat oven to 350 and butter a loaf pan.

Grate zucchini and place in a colander over a bowl. Let stand ten minutes and squeeze out excess moisture.

In a large bowl, beat the honey with an electric mixer for about 5 minutes until white and opaque. Beat in the eggs, melted butter and vanilla. Add raisins.

Sift together the dry ingredients, including the spices. Stir in the honey-egg mixture and the zucchini. Mix well. Add nuts.

Pour batter into loaf pan and bake for 35 – 45 minutes until a knife inserted in the middle comes out clean. Eat.
