• 3-4 small cucumbers, scantly peeled and cubed
  • 2-3 large tomatoes, quartered
  • 3 purple bulb onions sliced
  • 1/3 cup Extra Virgin Olive Oil
  • 1/8 cup Balsamic Vinegar
  • 1 tsp. yellow mustard
Combine olive oil, vinegar and mustard, then add veggies. Lightly toss to coat. (Sprinkle flax seeds on top to add more nutrition!) Chill and serve over fresh romaine or by itself. Yum-yum!
